My kids are big fans of pancakes for breakfast, so creating the best pancake recipe was a must in this house. These pancakes come together very quickly with ingredients you most likely already have on hand. Depending on the type of pancake lover you have in your house, you can add anything you want to these as they are cooking or stir it into the batter. For example we love to add slices of apples, strawberry chunks, blueberries, or chocolate chips. And of course they are all topped with butter and local maple syrup for that classic pancake flavor!

If you do plan to add any kind of fruit or chocolate to your pancakes be sure to do so before you flip the pancake so it can slightly cook into the batter.(see image above)

The Best Fluffy Pancakes

Ingredients
1 1/2 Cups All Purpose Flour
1 Tbls. Baking powder
1/2 tsp. Salt
1 Tbls. Sugar
1 1/4-1 1/2 Cups Whole milk ( or more if batter is too thick add 1Tbls. extra at a time) (any kind of milk will do; we prefer whole milk)
1 Egg
3 Tbls. Butter, melted (plus more to top pancakes)
1 tsp. vanilla
Maple Syrup if desired to top your pancakes before eating
Desired toppings (Apples, strawberries, blueberries, chocolate chips)
Directions
- Melt butter in a small bowl in the microwave
- Combine all ingredients into a medium sized bowl and stir until evenly mixed. Adjust milk as needed to get a slightly thick yet smooth and pourable batter.
- Cut up any desired fruit/gather any chocolate chips you would like to add to your pancakes.
- Preheat your skillet or griddle at medium- low heat and lightly grease with either cooking spray or butter.
- Using either a spoon or a cookie scoop, scoop batter onto heated skillet, add desired toppings and let cook until lightly golden on the bottom. At this point the batter should be nice and bubbly before flipping.
- Flip and let cook for 1-2 minutes until golden and cooked thoroughly. Cooking time may vary by stove.
- Repeat this process until all the batter is gone.
- Immediately add additional butter to the top of your warm pancakes. Top with syrup & enjoy!
Notes
- For any extra pancakes you can freeze them! Simply add to a freezer bag and put a piece of parchment paper in between each pancake to prevent them all from sticking to each other.
- Instead of topping the pancakes with your desired topping you can also add them into the batter before cooking. Sometimes I like to add small chopped pieces of apple and a sprinkle of cinnamon to the batter.
